This post here explains this in more depth.  What is happening is that there doesn’t seem to be a way to close those attachments once they are opened on the iPad in mail.  The user finally had to restart the iPad to get control back.  I wonder if this could also have been solved by trying to force close the application by holding down the home key.  That is how you can force applications to close on the iPhone.
